Hi guys,

Doing a bit of cooking here.

Making enchiladas.

I have never made them before and I am making up my own recipe. Inside the wraps will be ricotta, pumpkin, roasted potatoes (cut in cubes) and fried leek. Then on top will be tomato sauce that has been simmered all day (just like Nonna’s) and cheddar cheese. Put in oven to cook! Wish me luck

sounds healthy if nothing else @Oaktree  good luck , sometimes no recipe works for me, sometimes slight variations mess things up lol
